Taco Stuffed Bell Peppers using the Freshest Ingredients from Florida

Who says tacos are just for Tuesdays?  Tacos are perfect for any day of the week in my opinion, especially when you replace the shell with a bell pepper!  I'm always looking for healthy recipes and ways to incorporate fresh and local ingredients into our week night meals that my entire family will love.  As a mom of two toddlers and two on the way, that is very important to me.  I mean, if you're a mom then you know how picky toddlers and kids can be.  Am I right?

We tried our hand at Taco Stuffed Bell Peppers with (non-spicy) Corn Salsa and it did not disappoint.  I absolutely love that 90% of our dinner was made from the freshest ingredients, Fresh from Florida.  It makes me feel really good that I am able to give my family healthy options that don't have to be boring or bland and are full of color.  The brighter the colors, the more likely my two little girls are to eat it; that and of course, anything with corn.  Ha!  

The best part is I can find all of this wonderful local produce at my nearest Publix.  It's nice that I don't have to go far to find and get fresh, local ingredients for my meals grown right here in Florida.

Now, onto the good stuff....the recipe!  These Taco Stuffed Bell Peppers are so easy to make, especially when you are a mom of toddlers and/or just looking for a quick week night meal.  It's little prep and the end result is fresh and delicious!  The Florida bell peppers, tomatoes, corn and red onion come together so well and will leave your taste buds singing.  There really is something special and flavorful about ingredients that are not processed and Florida farmers make it easy for everyone to eat fresh produce year-round.

I omitted the hot sauce in the corn salsa so my girls could eat it, but added it in on my plate.  You could even add fresh minced jalapenos for an extra kick!

Project Sunrise at First Watch

I've got nothing but coffee on my brain today and with two toddlers running around acting a little cray, I'm sure you can guess why.  It's taking me back to a few months ago when I got to enjoy a delicious cup of Project Sunrise coffee at First Watch.

Project Sunrise is First Watch's new coffee that made its nationwide debut back in January and it's part of a great cause.  This high quality coffee is grown and harvested by a group of women in the Huila region of Columbia.  If you know about how coffee is grown in Columbia, then you know it's mostly dominated by men, but due to civil conflict, the amazing women behind Project Sunrise stepped up and took over to support their families. 

Together, they formed the Mujeres en Cafe organization and strive to grow the highest quality coffee bean.  If that doesn't make you want to head to First Watch asap and try a cup, I don't know what will. 

Seriously though, the coffee really is just as amazing as the women behind it and it pairs perfectly with everything on First Watch's menu.  Trust me...I test tasted a variety of items just to make sure ;)  From the Superfood bowls with whole grain artisan toast topped with almond butter and Maldon sea salt.

To the Million Dollar Bacon (worth every penny) and the Avocado Toast!  Can you believe it was the first time I've tried avocado toast?!  I now know what all the hype is about, especially if you've had it from First Watch. 

They even have the most amazing juices.  You have to try the Kale won't be disappointed!

If you've been following us on social media, then you know we are expecting in September this year.  If you haven't, then you've missed the even bigger news because we are expecting...TWINS!!

This was a huge shock for us, especially since we thought we were having another miscarriage, which I plan on talking about in another post.  Before the miscarriage scare, we had already scheduled our girls to have their Valentine's pictures taken with Andrea, from Off the Walls Photography.  I thought this was the perfect opportunity to throw in some pregnancy announcement pictures to share with our friends and family.  This was obviously before we knew we were having twins and decided to wait to share our news until we made it through the first trimester.

I'm so excited to finally share these photos with you all!  I hope to get a pregnancy update soon too, but the exhaustion from this pregnancy has been brutal.  Since this will be my last pregnancy, I can't wait to share our journey with you all!

Things to do Tampa Bay | Disney on Ice

I have looked forward to taking my girls to Disney on Ice each time they are visiting our city over the last few years.  It is always magical and always a blast.  This year I decided to make it just a date night for just myself and my oldest daughter.  I realized that it's not often that I take her out without little sis hanging out with us too.  We had such a great time and I can say without a doubt that Disney on Ice Reach for the Stars was by far my favorite Disney on Ice performance.  I think my daughter would have to agree as well.

It was very entertaining from the beginning, full of color and each character's performance was just as amazing as the last.  It opened with our favorites, Mickey and Minnie who came out between each set to introduce us to who was coming on.  Em's reaction to the opening performance was pure joy and excitement.  

From my favorite childhood movie, The Little Mermaid, to Rapunzel, Belle from Beauty and the Beast, to Em's favorite, Elsa and Anna!  We sang, danced and laughed our night away...not without having a snow cone first and stopping for a hug and kiss from my little one to thank me.  She really is the sweetest.

If you have ever wanted or thought about treating your little ones to Disney on Ice, it's a must!  You can't go wrong with any seat in the arena and your kids will be thanking you for a very long time!  You might even be able to get them to clean their room and make their beds.  I can't be the only mom who occasionally takes advantage of the opportunity to bribe their kids, right? ;)

Fresh from Florida | Shopping Locally Grown

I have lived in Florida for almost eight years now and this is by far my favorite time of the year.  I moved here from Texas and truly had no idea how much is grown locally and I've been buying locally grown ever since.  The weather is wonderful this time of the year and all of Florida's produce is fresh and in-season; from the strawberries to the bell peppers to the tomatoes and mushrooms.  My mouth is watering just thinking of all the delicious things I can make with those fresh ingredients. 

My girls love this time of the year too and especially love when we get to go strawberry picking.  I love that when we can't make it to the strawberry fields, that I can just head over to my local Publix grocery store and find quality produce Fresh from Florida just by looking for the signs.

I love shopping locally because I know what I'm getting and I know where it's coming from-Florida farmers of course!  Being a mom of two toddlers, this is very important to me and Florida farmers make it easy for this to happen all year long.

Last Week with the Funk's

Welcome to my (new) weekly post of what we did for the week!  I'll share things I'm loving, things I'm working on and everything in between. Some weeks will be exciting, but some will probably be boring #keepingitreal  

I started out strong last month and keeping up with what we were up to during the weeks.  This month has been a completely different story, but for good reasons!  I took the last few weeks off because there are some big changes heading our way in the Funk house.  I can't wait to share what we've been up to and what we are gearing up for.  In the meantime, here's a look at what we've been up to for the last few weeks ;)

My girl's and I had a little Valentine's Day celebration with a few friends.  We decorated cookies, made Valentine's Day cards and played outside to get some of the sugar out of our systems.  Everything was either heart shaped or covered in sprinkles.  I'd say it was a win!

I was actually sick later in the week and didn't do much but catch up on sleep, which is part of the reason I haven't been blogging.  I'm way behind on all the fun things to do in Tampa posts I want to get out to y'all.

Over the weekend we went to a really fun Valentine's workshop at AR Workshop in St. Pete.  I had fun at their blogger event and couldn't wait to take my girls for their kids event.  They made the most adorable wood signs for their bedroom and did it all on their own (for the most part)!


I had the chance to get a little "me" time and head to a blog event at First Watch in Clearwater.  We tried out their new Sunrise Project coffee that is so good and of course ate some of their delicious food.  I will be sharing more about their coffee in a few weeks. 

We spent our Valentine's Day morning at Lowry Park Zoo and finding out the new baby orangutan's name.  In case you missed my Instagram post, it's DIRA! We spent a few hours there seeing the animals, going on an expedition and feeding the birds before heading out for our MOPs Valentine's Day party at the park.  It was a fun, busy and sugar filled day!  I even got to go out to dinner with friends twice last week!  My husband is pretty awesome ;)

We ended our week and our weekend low key.  We hung around our house, I had a couple of photo-shoots and my husband put up our new fence; which was fine by me because we have a busy week ahead and then we are heading to Georgia for a kid-free vacation!

Things to do Tampa Bay | Monster Jam

Thank you to Feld Entertainment for gifting us tickets to Monster Jam!  As always, all opinions are 100% honest and my own.
Did you miss the Monster Jam show earlier this month?  If you did and are super sad about it (like I am), then you have another chance to go!  Monster Jam is coming back this weekend, Saturday, February 3rd, to Tampa and will be providing the adrenaline charged family fun we all love at the Raymond James Stadium!

If you are a fan of Grave Digger, El Toro Loco, Soldier Fortune, Cleatus and Hot Wheels, you are not going to want to miss this special show!  You will seriously be on the edge of your seat the entire time!  It's not too late to get tickets and your kids will definitely thank you for it.  If you have little ones, like I do, then you can easily turn this into a fun date night too.  Tailgating, pit parties and more truly does makes for a great night for all ages!

Last Week with the Funk's

Welcome to my (new) weekly post of what we did for the week!  I'll share things I'm loving, things I'm working on and everything in between. Some weeks will be exciting, but some will probably be boring #keepingitreal  
If the week before taught me anything, it's that slowing down and taking a break is okay.  My husband was off work on Monday for the holiday, so we basically just hung around the house.  We had plans to go honey-bell picking (something we've been trying to do for weeks now), but it was really cold out again and I wasn't feeling great, so that didn't happen.  I even had plans to meet a friend for lunch and had to cancel that too.

I started a new Bible study session last week and it felt so good to be back since before Christmas.  The study we are working on is called The Quest and it's going to be a good one.  I can't wait to share more with you as the weeks go on.  We had a play date in the afternoon and the girls had a blast, as always.  

We even had our first MOPs meeting for the year and it's always so much fun to have all the wonderful women and moms I've met over the last year or so all in one room.  We talked about the importance of YOU and ended with yoga that was both entertaining and relaxing!

There is a nearby library that hosts a music and free play class on Thursdays and we decided to meet up with some friends, run off some energy and have a lunch date at Chik-fil-a.  Did you happen to read my last blog post and the only blog post I managed to write last week?  I promise we don't go to Chik-fil-a as much as it sounds. 

My husband and I even started a Bible study together last week, called Love and Respect, that is going to be pretty amazing too.  I'm excited to see where it takes us in our marriage and how it helps us grow as a couple.  My in-laws kept our girls that night, so we got to go on a date after our class and decided chips and queso at Tijuana Flats was the right way to do that.

I got a much needed morning with a good friend Friday morning since my girls were still with their grandparents and got to enjoy my coffee hot!

Since this weekly post is about real life and how our week went, I have to admit that we spent most of our Friday evening cleaning and making sure none of us had lice after a text from a friend who's kids had it.  Thankfully we came out in the clear, but I know with Emma starting school soon, this is only the beginning of notes like that and even though it's a pain, it's not a big deal.

We did have an amazing weekend.  The weather was perfect both Saturday and Sunday.  We went shopping, put together and bounced on the girls new trampoline, had friends over and a movie night, grilled out and watched the football games!

Actually, even though this week seemed slow, it was eventful.  I'm excited to share some big things that are happening in the Funk house soon!
