I tried to keep it simple this year. Being 19 weeks pregnant with twins and easily exhausted, I knew the less I had to do, the better. It turned out great! We had a taco bar, pina colada fruit salad, and ended with cactus cupcakes and choco-tacos. The fruit salad was incredible and I would definitely make it again for any other occasion or Summer party.
For drinks, I made an easy "cactus juice" for the kids and of course, margaritas and cerveza for the adults. Minus me, whose drink was non-alcoholic.
We put up our bounce house and threw in a slip-n-slide and inflatable pool for several hours of entertainment. The kids had so much fun and I didn't hear any complaints! I had planned on DIY maracas for the kids and had a giant taco pinata, both of which we didn't get to because they were having so much fun playing outside.
