How we found out our BIG news! | Part 1

My last three posts have been all about food #pregnantlife, so I thought I would share about my pregnancy (how I found out and told my husband) since I haven't done much sharing since our announcement.  To be completely honest, the first trimester was rough, which was something I didn't experience with my other two.  It left little time to blog and we had some scares along the way.


When we found out we were expecting last Summer, we were definitely surprised but excited.  We ended up having a miscarriage and decided we were happy with our two girls and didn't necessarily want to have any more kids.  I told my husband that if he was sure then to go ahead a schedule a vasectomy and that would be that. (Clearly that didn't happen)

Having a miscarriage was hard on me.  I had good days and bad days and am so thankful I was able to surround myself with some pretty amazing friends and of course, my husband.  I ended up having a D&C so my periods weren't quite back to normal, but not even 6 months later I knew I was pregnant again.

I actually had Publix deliver a pregnancy test because I was anxious to take one but didn't want to go to the store to grab one with two toddlers.  Ha! I took the test and it didn't take long for two pink lines to show up.  I normally call my husband once a day just to say hi or check in, but avoided talking to him because I knew I would spill the beans and didn't want to tell him over the phone.  It's funny because he ended up calling me that afternoon to make sure everything was ok.  

I managed to keep quiet and decided to leave the pregnancy test on the bathroom counter for him to find when he got home.  Another funny moment...my husband normally goes straight to our room/bathroom to get undressed and unwind for a minute before being bombarded by our two toddlers.  That day he decided to come straight to the living room and "chat" with us.  He said he was in the mood for Chinese and I took that opportunity and ran with it.  I told him to check the bathroom and that in about two minutes he probably wouldn't be hungry anymore.

He thought the girls had smeared poop all over our bathroom.  Totally not kidding!  When he got to the bathroom, all I heard was, "No, no, no".  I was cracking up in the other room!  It took us both by surprised, but we were happy.  Despite the yelling of "no" from my husband.

Taco Stuffed Bell Peppers using the Freshest Ingredients from Florida

Who says tacos are just for Tuesdays?  Tacos are perfect for any day of the week in my opinion, especially when you replace the shell with a bell pepper!  I'm always looking for healthy recipes and ways to incorporate fresh and local ingredients into our week night meals that my entire family will love.  As a mom of two toddlers and two on the way, that is very important to me.  I mean, if you're a mom then you know how picky toddlers and kids can be.  Am I right?


We tried our hand at Taco Stuffed Bell Peppers with (non-spicy) Corn Salsa and it did not disappoint.  I absolutely love that 90% of our dinner was made from the freshest ingredients, Fresh from Florida.  It makes me feel really good that I am able to give my family healthy options that don't have to be boring or bland and are full of color.  The brighter the colors, the more likely my two little girls are to eat it; that and of course, anything with corn.  Ha!  

The best part is I can find all of this wonderful local produce at my nearest Publix.  It's nice that I don't have to go far to find and get fresh, local ingredients for my meals grown right here in Florida.
 

Now, onto the good stuff....the recipe!  These Taco Stuffed Bell Peppers are so easy to make, especially when you are a mom of toddlers and/or just looking for a quick week night meal.  It's little prep and the end result is fresh and delicious!  The Florida bell peppers, tomatoes, corn and red onion come together so well and will leave your taste buds singing.  There really is something special and flavorful about ingredients that are not processed and Florida farmers make it easy for everyone to eat fresh produce year-round.

I omitted the hot sauce in the corn salsa so my girls could eat it, but added it in on my plate.  You could even add fresh minced jalapenos for an extra kick!

Project Sunrise at First Watch

I've got nothing but coffee on my brain today and with two toddlers running around acting a little cray, I'm sure you can guess why.  It's taking me back to a few months ago when I got to enjoy a delicious cup of Project Sunrise coffee at First Watch.


Project Sunrise is First Watch's new coffee that made its nationwide debut back in January and it's part of a great cause.  This high quality coffee is grown and harvested by a group of women in the Huila region of Columbia.  If you know about how coffee is grown in Columbia, then you know it's mostly dominated by men, but due to civil conflict, the amazing women behind Project Sunrise stepped up and took over to support their families. 

Together, they formed the Mujeres en Cafe organization and strive to grow the highest quality coffee bean.  If that doesn't make you want to head to First Watch asap and try a cup, I don't know what will. 


Seriously though, the coffee really is just as amazing as the women behind it and it pairs perfectly with everything on First Watch's menu.  Trust me...I test tasted a variety of items just to make sure ;)  From the Superfood bowls with whole grain artisan toast topped with almond butter and Maldon sea salt.


To the Million Dollar Bacon (worth every penny) and the Avocado Toast!  Can you believe it was the first time I've tried avocado toast?!  I now know what all the hype is about, especially if you've had it from First Watch.

If you've been following us on social media, then you know we are expecting in September this year.  If you haven't, then you've missed the even bigger news because we are expecting...TWINS!!


This was a huge shock for us, especially since we thought we were having another miscarriage, which I plan on talking about in another post.  Before the miscarriage scare, we had already scheduled our girls to have their Valentine's pictures taken with Andrea, from Off the Walls Photography.  I thought this was the perfect opportunity to throw in some pregnancy announcement pictures to share with our friends and family.  This was obviously before we knew we were having twins and decided to wait to share our news until we made it through the first trimester.


I'm so excited to finally share these photos with you all!  I hope to get a pregnancy update soon too, but the exhaustion from this pregnancy has been brutal.  Since this will be my last pregnancy, I can't wait to share our journey with you all!
