Sneaking in Veggies, One Muffin at a Time

I used to be one of those moms that would brag a little because I had a little one that wasn't a picky eater.  She would really eat anything that I gave her from avocados (her favorite) to broccoli (once she got over the texture) to peas.  Green food that I didn't have to fight her on.  It was great!  

Then, we hit the dreaded picky eater stage that I was certain wasn't going to happen.  There are some things that she just won't eat now, vegetables being some of those things. 

When I came across Garden Lites muffins at Publix, I knew we had to try them.  I mean, the first two ingredients are zucchini and carrots followed by brown rice flour, oat flour, and ground flaxseed meal.  How could I pass these up?!  Em just saw chocolate and they looked so good to her she tried to eat the box.  Ha!


I assured her that if she could wait until we got home, she would literally be in for a treat and I would have a #momwin for the day.  Garden Lite muffins are even allergy friendly, meaning they are gluten, dairy and nut-free.

To say that she loves them would be an understatement.  All she could talk about was getting to have a chocolate muffin and I love them because she is getting healthy, veggie filled snack.  

Garden Lites muffins are also super convenient.  They come individually wrapped, so you can toss one into your kid's lunch box or one into your purse for on the go.  They taste just as good any way you eat them!  Garden Lites muffins definitely do not taste like they come from the freezer section or like they have veggies in them.  All you have to do is microwave them on high for 35 seconds and you've got yourself a delicious vegetable filled treat that tastes fresh from the oven!



We have tried both the chocolate muffins and the banana chocolate chip muffins - both amazing!  I may have eaten two in one sitting.  Garden Lites muffins also come in Blueberry Oat, Carrot Berry and Ninja Power, which we can't wait to try.

If you're going to be a princess, you have to eat your vegetables.  Even if they are hidden in a delicious chocolate muffin!

Baby Shower Brunch {On A Budget}

A few months ago my neighbor and I had the opportunity to throw her assistant and our friend a baby shower.  She kept the gender a secret, so we kept it neutral and decided a simple baby shower brunch would be the perfect way to celebrate.  (Update: she had a beautiful baby girl)

Set Up: Keep it Simple

You could really go crazy when throwing baby showers or any kind of party at that.  If you're like me, you love Pinterest and know how out of hand that can get.  For this baby shower brunch, we kept it simple and stayed on a budget.  It was a small group of friends, so we kept the table setup to a minimum.  We had a simple gray tablecloth and used a mixture of teal, clear and white dishes.  


Decorations: 

Less is more, right?  We went with the cutest and perfect sized BABY balloons from Twigs and Twirls and hung it above our brunch table.  We had a vase full of fresh flowers that tied it all together perfectly.  You really don't need to spend a lot to make a table look good.  Chalkboard tags are always nice to have to label food/drinks and they are reusable.  I always like to find decor that I know will have multiple uses, like the Celebrate banner below.

Disney on Ice | Worlds of Enchantment

We had the best time yesterday at Disney On Ice!  It was fun leading up to the actual event because Em had no idea what she would be attending.  We vaguely told her about going to see princesses, but she was surprised to find out they would be ice skating!  Of course, she immediately wanted to go out there and ice skate with them.  

Disney on Ice opened with the famous Mickey and Minnie Mouse!  Em was very excited when Donald Duck and the rest of the gang joined.  Toy Story was shortly after and we loved watching the toy soldiers come to life and do a dance.  My personal favorite was watching Barbie and Ken!

It was followed by my favorite childhood movie, The Little Mermaid, where they brought us along on their underwater adventure! They ice skated to some of my favorite songs and Em giggled when I started to sing along :)


After intermission, we were greeted again by Mickey and Minnie, who needed help from Tow Mater and Lightning McQueen!  It was really neat seeing some of the characters from Cars join the fun.  Em really enjoyed this part of the show.
 

Em's favorite part keeps changing every time we ask her, so I think it's safe to say she loved it all.  However, she was mesmerized and pretty much didn't move when Frozen was the big finale and I'd say stole the show!

A Traditional One Year Anniversary Gift & Our Love Story

My husband and I got to celebrate our first year of marriage this week and I can't believe how quickly this year has gone by.  It might be because we have a 3 year old and a 1 one year old that keep us busy, but none the less, it has been quite the year.  I wanted to give Michael a traditional one year anniversary gift, but had no idea what I could do with paper.  I finally found the perfect gift and I can't wait to share it with you.


First, I want to share the story our little love story.  We met 5 years ago this month and if you had told me then that I would be married to him and have two beautiful girls, I wouldn't have believed you.  I love when I get the opportunity to tell people how we met.  It's not this big drawn out, romantic love story, but it's OUR story and it makes me so happy to share it with others.

He and I met on Eharmony.  I decided to join when I realized that I didn't know how to date as an adult.  I know that might sound silly, but I had just moved to a new state and didn't know very many peopleI had gone on a few dates, but nothing came of them and it was honestly exhausting.  I had been on the dating site for about a year when I made the decision to just give it a break

I was working for a college at the time of all of this and I enjoyed showing everyone the matches I was being paired up with.  I had actually logged into my account to cancel it, when I received Michael as a match and a message from him.  I thought he was cute and sounded like a lot of fun.  I was encouraged to go out with him and I kept an open mind, but told myself this would be my last Eharmony date.  Little did I know that it actually would be my very last Eharmony date.

We decided to meet at Starbucks for coffee, which was perfect because I have a big love for coffee.  Oddly enough though, I think I ordered a green tea.  Turns out that he chose that place so he didn't have to pay for an actual meal if things didn't work out.  It was funny when I found this out and honestly, pretty smart on his part.  He ended up being an hour late, but I waited patiently (in my car to scope him out when he arrived).  He showed up in ripped jeans, sandals and shorter than he stated in his profile, which I made sure to call him out on several minutes into our date.

























 We sat outside and talked and before I knew it, 3 hours had passed by and I was rushing home to complete an assignment that was due at midnight.  We had the best time and I couldn't wait to see him again....which was two days later and this time he paid for dinner :)

Our love story is one where it truly was God's perfect timing.  I say this because Michael had just recently joined Eharmony.  If I had canceled my account just a day before, I might not have met him.  I am so glad that I decided to go on that "last" first date.

Since, it is our first wedding anniversary, I wanted to gift him something special.  Something that represented both of us and the place where it all began.  We are both from different states originally and both ended up in Florida.  We both have different reasons why we moved and those reasons ultimately led us to each other.  I wanted a gift that we would be able to cherish forever and never forget where it all started.

This personalized heart map art from Jackie's Attique was perfect!  I was able to customize this to show where we are both from and where we met/married.  This would be great to use for met/engaged/married and Jackie has so many other options that are wonderful!  My husband loved it and I loved watching him open it.  It looks amazing on our gallery wall in our dining room and I love that we will have this forever to remember so many special moments.
